1 head of cauliflower
1/2 cup mayonnaise
2 Tablespoons Willamette Valley Sweet 'N Hot Stone Ground Mustard
1/2 cup of cheese (Cheddar or Jack), grated
1/2 teaspoon salt
Wrap head of cauliflower with waxed paper and micorwave on high for 8 minutes or so (test head to see that it is soft-just right for eating). Mix mayo, mustard and salt together and spread over the entire head of cauliflower.
Spread cheese over the mayo mixture so that it covers the entire head. Microwave for thirty seconds. Sprinkle with paprika or chives (just to make it pretty). Cut into wedges, one for each person, or eat the whole thing yourself.
