Suzie’s Burger Wellies
Makes 2 burgers
1 sweet onion thinly sliced
2 tablespoons butter
1/2 teaspoon salt
1/4 cup red wine (good balsamic vinegar can also be used)
1 tablespoon sugar
2 tablespoons Suzie’s Organic Spicy Brown Mustard (Organic Dijon or Organic Yellow also work, but Spicy Brown is our favorite for this recipe! You can get all these on our website with free shipping, or local Portlanders may find them in these stores.
6-8 oz ground beef, divided
Salt and pepper
4 strips of bacon, fried and drained
2 slices smoked gouda cheese (or cheddar, if you prefer)
1 sheet puff pastry brought to room temperature and unrolled
Butter to grease baking sheet
2 egg yolks beaten with 1 teaspoon water
Sesame seeds for sprinkling on puff pastry
Melt butter in heavy skillet over medium heat, and add sliced onion and 1/2 teaspoon salt. Stir to coat. Place cover over skillet and cook for 10 minutes, stirring occasionally. Remove lid and increase heat to medium high. Cook for about another 10 minutes until a deep golden brown, stirring often. Add wine, sugar and mustard. Stir to get all the brown bits from the bottom of skillet. Turn down heat and allow the wine to totally reduce. Set aside.
Form burger into two patties. Salt and pepper both sides. Sear both sides very quickly in a very hot skillet. Do not cook patties or they will dry out in oven.
Using a bowl that is about 5-1/2 inches in diameter, cut out two large circles in the pastry sheet. Position the circles diagonally so you have room two more circles that are about 3-1/2 inches in diameter. We used a water glass to cut these smaller circles on the other diagonal.
Layer 1/2 of onion mixture on the top of each burger. Place bacon on top of onions and then layer cheese slices. Drape the larger pastry rounds over the top of the burgers and smooth it down the sides. Turn patties over. Brush the smaller pastry rounds with egg yolk and cover the exposed side of burger with the egg wash side facing the burger. Seal the pastry rounds together. Turn burgers over and brush the top and sides with egg yolk. Sprinkle with sesame seeds.
Place in refrigerator on buttered cookie sheet for at least 15 minutes or longer. While chilling, preheat oven to 375 degrees. Then, bake burger wellies for 20 to 25 minutes, until golden brown.
Remove from oven and allow to rest for 5 minutes before slicing in half. Enjoy the gooey goodness.
